  1. WHY WE ROAST COFFEE: When I could not see the rich layer of caramel foam called “crema” covering the top of the cup out of my commercial-grade espresso machinery, it ruined my entire day. To get this, I needed coffee bursting with fresh-roasted vitality straight from the roaster. With no roasters between Jacksonville and Beaufort, I got tired of regular runs to big cities, & with the help of a friend built roasting equipment.
